Sheet Pan BBQ Chicken Nachos

If you need a quick and easy meal for during the week or even just throwing something together on the weekend- this is it.

Nachos are always a favorite and it’s even better when you put some of your favorite things on them.

Things Needed:

4- Chicken breast

1- Dry Ranch packet

1- 18oz BBQ sauce

1- 8oz Shredded Cheese

1- small bag of Frozen Corn

1- jar of Jalapenos (use as many as you want)

Directions:

I start off by putting four frozen chicken breast into the crockpot. I put it on low for 4 hours. If you use thawed out chicken be sure to add a little bit of water to the crockpot so it doesn’t dry out. Most grocery stores carry shredded rotisserie chicken- so you can just grab that if you wanted.

After your chicken is ready go ahead and preheat your oven to 350

Cook frozen corn as directed on the package

While that is preheating take your chicken out of the crockpot and put it into some sort of mixing bowl. Take two forks and shred the chicken. Once it is shredded then add a packet of ranch mix and half a bottle of BBQ Sauce (TBH as much BBQ sauce to your liking.) Mix that all up.

Get a baking sheet line it with foil.

Spread tortilla chips all over the baking sheet.

Put the cooked corn on the chips

Place the shredded chicken on top of the chips and corn. Top that with shredded cheese and sliced Jalapenos.

Place the baking sheet into the oven for 7 minutes to let the cheese melt.

Take it out and serve right away.

If you’re a salsa person- it taste good on these.
